In short
HACCP (Hazard Analysis and Critical Control Points) is a system for identifying and controlling biological, chemical and physical hazards. In healthcare HACCP covers hospital kitchens, CSSD and buffer zones, in food industry — the entire production. HACCP is an operator system, not a product certificate — but construction features of the equipment (surface smoothness, lack of crevices, chemical resistance) genuinely affect whether you pass the audit. This article shows what the sanitary inspector looks at and which INOX dispenser features make it easier. Back to 6 standards →
Sanitary inspector checks CCP #4 (Critical Control Point): "Food exit zone from kitchen to wards". A control point includes the dispenser with nitrile gloves for transporting staff. Inspector's questions: Can the dispenser front be washed? Does dirt accumulate in crevices? Does the outer glove container survive daily wiping with chlorinated cleaner? Plastic basket — remarks in protocol, "non-procedural element". MedicLine INOX 304 dispenser with smooth front — entry "compliant CCP #4, daily visual control". Audit passed.
What the HACCP auditor checks
4 typical HACCP control points for dispensers
- Material — food-safe zone requirement — stainless steel, non-reactive with acids, alkalis, disinfectants
- Construction — no crevices or hard-to-clean spots — folded edges (not welded), no sharp internal corners, easy access to every surface
- Surface — smoothness Ra ≤ 0.8 µm — HACCP requirement for contact surfaces in food / sterile zones. Standard plastic Ra 2-5 µm — non-compliant
- Mounting — minimum wall contact — container held vertically, no horizontal base collecting spilled liquids, access to rear wall for washing
Which dispenser features ease the HACCP audit
HACCP does not certify products — it certifies the operator's process. The auditor, however, still looks at the equipment. Construction worth choosing for a zone under HACCP has a few features recognisable at first glance:
- Stainless steel of food-zone grade — INOX 304 (1.4301) or 316L (1.4404). The NexArmor line uses 1.4301 (AISI 304) with brushed satin finish.
- Folded, not welded edges — no seams where microbes can accumulate. A standard visual checkpoint.
- Vertical wall mount — no horizontal base collecting spilled liquids. Distance from the wall (about 10 mm) allows washing of the rear surface.
- SecuBox (GEBRA) containers in ABS / HDPE — material approved for food-zone contact under the relevant EU standards (EU 1935/2004 — confirm with the manufacturer for the specific model).
If you work in a sector where HACCP is the foundation of the sanitary regime — ask your supplier about these features before ordering, not after an incident.
Sectors where HACCP applies
- Hospital kitchens — full HACCP regime, glove + mask dispensers at meal preparation stations
- CSSD (central sterile services) — analogous hygiene standards to HACCP, contact with sterile packaging
- Hospital ⇄ OR buffer zones — material airlocks, PPE warehouses
- Sterile compounding pharmacies — contact with pharmaceutical raw materials, combines HACCP with GMP Annex 1
- Food industry — meat, dairy, bakery plants — full HACCP regime from production zone entry
- Hospital catering and medical caterers — patient diet meal production
Documentation available with a B2B order
What we can attach to the offer / delivery
- Technical data sheet with material identification (INOX grade, surface roughness, folding/welding method)
- Steel mill certificate 3.1 per EN 10204 — on request (chemistry + technical parameters)
- Product card with cleaning and disinfection procedure
- Notes on chemical-agent compatibility (alcohol, chlorine, QAC) — per manufacturer documentation
- Installation manual with the wall distance needed for cleaning
If your HACCP procedure requires a specific document (e.g. food-zone material declaration for a particular SecuBox model) — let us know directly and we will check with the manufacturer what is available.
